Origin of Kape Nakoj
Kape: Word that comes from a very important Mayan indigenous language Kaqchikel from which the meaning of Coffee is derived.
Nakoj: It is derived from the word Xenacoj in its original Kaqchikel language and its meaning is: Where the Lion roars.
Birthplace
45 kilometers from the capital of Guatemala is Santo Domingo Xenacoj, a community with more than 400 years of history, famous for rebelling against the Spanish militias and for possessing a unique cultural wealth.
The indigenous people rebelled against a Spanish who wanted to appropriate these lands and fought against the soldiers. This is how this mystical corner of Sacatepéquez was born, says the priest Juan Manuel Larios in his book ``Chronicles of Santo Domingo Xenacoj``.
It is a city that invites you to spend a family weekend to admire each chapter of its history written in Kaqchikel, which dates back to 1580 when it was founded by Fray Benito Villacañas, the Order of Preachers, which later took the name of Dominicans. That is why he names Santo Domingo de Guzmán as his protector, patron and friend.
A Quality Coffee
Some coffee lovers may have their own techniques for determining how good a specialty coffee is, but the SCA Cupping Form has been for long time the official method, establishing a universal way to cup beans.
For this method, there are 10 categories to evaluate with a maximum score of 10. 7 of these are to determine quality, which are: Fragrance and Aroma, Taste, Residual Taste, Acidity, Body, Balance and Taster score. The other 3 categories are Sweetness, Clean Cup and Uniformity, which are used to discover defective coffees.
According to this same scale, only coffees that exceed 80 points on a scale of 0 to 100 can be considered “specialty”. If it exceeds 85 points it is an excellent coffee, and if it exceeds 90 then it can be classified as an “exquisite” variety.
